WHAT TO EAT
Farinata
Sauté the leeks in oil and then add the cabbage (remove the ribs from the leaves). After 3 minutes add half of the beans, previously boiled and passed to the mill. Add a little hot water, salt and then pour the sifted flour. Mix until cooked.
You can taste it immediately on a spoon or let it cool and treat like polenta: the next day it is excellent grilled or sautéed in a non-stick pan.
Cenci
Cenci is a typical carnival dessert. The sweet dough of eggs and flour is rolled, cut into strips, similar to scraps of cloth and fried in oil or lard.
Easter little donuts
According to the traditional recipe the dough is prepared by combining white flour, fresh eggs, sugar, butter, lemon peel, milk and yeast. They form small donuts and cook in the oven for half an hour. Apart it melts sugar with anise liqueur and a little water in a pot (for this they were called "sprinkles to the pot"). Once cooked, the biscuits are dipped in melted sugar and cooled. They are also wet in the alchermes, a liqueur that gives it a bright red color.
