1. Potemkin Stairs. These iconic stairs are a historical landmark and a testament to Odesa’s grandeur. The 192 steps offer panoramic views of the city and the Black Sea. 2. Privoz Market. Immerse yourself in the local culture at Privoz Market, one of the oldest and most vibrant markets in Odesa. It’s a sensory delight with stalls selling fresh produce, spices, and local delicacies. 3. Primorsky Boulevard. This picturesque boulevard, overlooking the sea, features lush greenery, statues, and a relaxing ambiance.
What to eat
One of Odesa’s signature dishes is “Forshmak,” a flavorful appetizer that combines herring, apples, onions, and various spices. Salted herring is finely minced and mixed with grated apples to prepare this dish, creating a balance of salty and sweet flavors. Chopped onions, often pickled, are added to provide a sharp contrast. Additional ingredients can include hard-boiled eggs, mustard, and mayonnaise for creaminess. Forshmak is typically served on slices of black bread or as a topping for baked potatoes. It’s a unique blend of ingredients that captures the culinary essence of Odesa, combining the region’s maritime influences with traditional Eastern European flavors.
Indeed, another well-loved dish from Odesa is “Mimosa Salad.” This layered salad includes boiled and finely grated potatoes at the bottom, followed by grated hard-boiled eggs, a layer of canned tuna or sardines mixed with creamy dressing, chopped pickles for a tangy touch, finely chopped onions for a sharp flavor, and a generous coating of mayonnaise. Often, it’s topped with grated cheese or breadcrumbs. Mimosa Salad is delicious and visually appealing, showcasing Odesa’s culinary inventiveness by combining various ingredients into a harmonious and delightful dish.
Another delightful dish from Odesa features “Odesa Fish Dumplings.” These dumplings are filled with various savory fish fillings. The dough is skillfully rolled out, filled with the chosen fish stuffing, and folded into crescent or half-moon shapes. They are then boiled until they rise to the surface and served piping hot. Odesa Fish Dumplings are frequently garnished with a drizzle of melted butter or a dollop of sour cream.
Local customs, tradition and festivities
1. Bun Day (Maslenitsa). Odesa residents celebrate Maslenitsa, also known as Bun Day, with enthusiasm. During this week-long festival leading up to Lent, people indulge in blini (pancakes), engage in various games and contests, and burn a straw effigy to bid farewell to winter.
2. Sea and Maritime Heritage. The city celebrates Sea Day with concerts and maritime-themed events, paying tribute to its maritime history.
3. Humorina. The city comes alive with comedic skits, street performances, and a playful atmosphere. The festival celebrates Oessa’s unique sense of humor and its reputation for wit and satire.

The work undertaken we meticulously organized as we prepared for a festival showcasing Odesa. Our team was strategically divided into smaller groups, each responsible for specific facets of the project to ensure a streamlined and efficient workflow. Our overarching objective was to comprehensively understand Odesa's unique character and present it in an engaging and informative manner. We aimed to identify gaps in the existing information and highlight areas where our work could provide fresh insights. The project was undeniably stimulating, as it compelled us to delve into uncharted territory while showcasing Odesa's unique charm. Our collective efforts have laid a solid foundation for the festival's success and have the potential to significantly contribute to the festival's portrayal of Odesa's cultural richness.
